Protein Packed Pancakes

These Pancakes are super easy and super nutritious. This recipe makes about 6-10 pancakes, depending on their size, so great to cook ahead and then enjoy as a light snack or breakfast.

  • 2 tablespoons of Vitimum (Vanilla or Chocolate) 
  • 1/2 cup of flour
  • 1 Banana
  • eggs
  • 2 tablespoons of plant based milk 
  • 1 tbsp baking powder
  • coconut oil, or a flavourless oil, for frying
  • Toppings of you choice: nut butter, maple syrup and berries or sliced banana to serve


  • STEP 1

    Mix the banana, flour, eggs, m*lk, baking powder, cinnamon and Vitimum in a blender for 1-2 mins until smooth. 

  • STEP 2

    Heat a small amount of oil in a pan. At a low to medium heat, pour small circles of the batter and cook for 1-2 minutes, until bubbles start to appear on the surface. Flip over and cook for another minute until cooked through. Repeat with the remaining batter. Enjoy these delicious pancakes with your favourite toppings.
